Fiesta Chicken – ahora! September 29, 2009

Most of my posts are about baking. Well this time I’m throwing in a bit of actual FOOD! It’s easy, quick and easy on the belt and the kids will eat it up (whew).

Preheat skillet with about 2 tbsp olive oil.

Chunk some raw chicken (it’s easiest to cut while still partially frozen) and throw it in the pan. Brown the sides.

While it’s cooking, sprinkle with cumin, chipotle powder, salt and galic to taste.

When done, remove and sprinkle with cheese. Toss into the microwave if you like it melted.

Lastly, top with some of your favorite salsa. Serve atop some yummy rice with a side of warm black beans. This, my friends, will go FAST!

Mom retired – FINALLY!! So to celebrate, my brother, mom’s best friend Lynnedelle, and I threw a fiesta and invited her friends to a yummy party! The menu was incredible…and I contributed zero!

Wine – essential. PS: it took my kindergarten teacher sister-in-law to figure out the bottle opener

Boy it was a great time. And it was awesome to see my friend Brian.
