The BEST Lemon Cookies of all time!
I made these tonight also just for Betty!
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 sticks (3/4 cup) unsalted butter, softened
1 cup sugar
1 large egg
Preheat oven to 375 degrees F.
Whisk together flour, baking powder, and salt in a small bowl.
Beat together butter and sugar in a large bowl with an electric mixer at medium-high speed until pale and fluffy, about 6 minutes.
Beat in egg and zest from one lemon. Add juice of 1/2 of same lemon.
Drop by teaspoon into granulated sugar and roll into balls.
Place cookies 2 inches apart on baking sheet.
Bake 12 minutes.
Dust with powdered sugar.
